Pork Sinigang Pinoy Special
Sinigang is one of the Philippines most famous food for variety of ingredients. It is a sour soup commonly incorporated with beef, chicken, pork, fish, & other seafoods. As my favorite dish, and commonly served in our store we'll list down everything you'll need in preparation for each kind of sinigang.
1 Kilo Pork (cut into chunk cubes preferably liempo part for its tender & juiciness )
12 pcs Tamarind (Sampaloc) (or one packet of sinigang mix)
1 big Onion (diced)
6 big tomatoes (quartered)
2 pcs Radish (sliced)
1 bundle Sitaw Stringbeans (cut into 2" long)
1 bundle Kangkong (cut into 2" long, separate the leaves & stalks)
1 pc. eggplant (sliced)
2 pcs okra (sliced)
Salt and Patis to taste
3 pcs Siling haba (long green chilli)
6 cups rice wash water
Procedure
In a casserole, bring pork to a boil, lower fire and simmer until pork is tender.
Add tomatoes
Add in all the vegetables. except for the Kangkong leaves & eggplant
Season with salt and Patis to taste.
Add onion. Kangkong leaves, eggplant, siling haba & Tamarind soup mix
Serve hot.
For some, we can replace the tamarind with kamias, raw mango or calamansi depending on how you like your sinigang to taste better and for some dining twist. For me, serving this comes with Patis(fish sauce) with siling labuyo & calamansi on the side for an added appetizing meal.
